Grass fed and nice and lean, the way to get the best out of this joint of beef is to roast at 220C for 20 minutes and then turn the oven down to 160C for the remain 40 minutes. This should ensure a delicious crust and a blush of pink once rested when cooking 1.5kg joint of beef

Weigh joint of beef to calculate the cooking time. Allow 20 minutes per 450g for medium, 15 minutes per 450g for medium-rare and 10-15 minutes per 450g for rare.
