Taken from pasture-raised British cattle, our sirloin benefits from the slow, natural growth that comes with grass feeding on small-scale farms. The result is a steak with excellent balance — tender yet full of proper beef flavour. It carries a fine texture and just the right degree of marbling, which keeps the meat moist and flavoursome as it cooks. Dry-aged with care, it is a classic cut that rewards simple, confident cooking.

According to legend, the sirloin steak got its name from King James I, who was so enamored with this cut that he felt it worthy of a knighthood. Hence ‘Sir Loin’! Actually, it’s derived from the French ‘surlonge’ or ‘above loin’. Little bit of steak knowledge there.
