Chicken thighs work so well, in so many different ways, it is hard to know where to begin. A good starting point would be to roast them in a deep tray with waxy potatoes, cauliflower and thyme. Cook for 35 minutes before adding a healthy sprinkling of Parmesan and finish with another 10 minute blast. Job done!
